Chicken Breasts with Mushroom and Onion Dijon Sauce

It is based on Dijon mustard, which gives it a sharp bite, but it is enhanced and given a more rounded flavor with the red onions, white wine, and herbs like parsley and rosemary thrown in. The whole thing can be cooked in a pan and readied for serving in 35 minutes.
