Falafel Wraps with Grilled Veg & Salsa Recipe

What's your idea of a tasty fast food loaded up with tortillas and other yummy mentionables? For us, a "Falafel Wrap" armed with grilled vegetables and salsa seems too appealing to disregard -- especially in this warm weather that’s making us reach for cold liquor and a dish to go with it. It's practically an easy recipe, 15-minutes tops, and your dish is good to go. See ingredients and method below:

 

Prep Time: 30 minutes

Cooking Time: 15 minutes

Yields: Makes 6 Servings

Ingredients:

  • For the falafel
  • 1 heaped tablespoon plain flour 
  • 1 x 400 g tin of chickpeas 
  • 1 heaped teaspoon allspice 
  • 1 lemon 
  • 1 bunch fresh coriander 
  • 1 tablespoon harissa 
  • 1 x 400 g tin of mixed beans 
  • olive oil 

For the sides:

  • 8 small whole wheat tortillas 
  • 250g low-fat cottage cheese 
  • 2 mixed-colour peppers, deseeded, cut into chunks 
  • 1 tablespoon Lingham's chilli sauce 
  • 4 spring onions 

For the salsa:

  • Handful of mixed-colour ripe tomatoes 
  • 1/2 clove of garlic 
  • 1/2 of fresh red chilli 

Method:

  1. Take a blender and add the beans and chickpeas without the liquid.
  2. Add the lemon zest allspice, harissa, coriander stalks, flour and the seasoning to it.
  3. Blend for 5 minutes or until the mixture is smooth.
  4. Create 8 patties using your hands.
  5. In a pan heat 1 tbsp of olive oil and fry the patties for 3 minutes on each side.
  6. Transfer them into a plate.
  7. In a griddle, add the peppers with onions. 
  8. Add the seasoning to it and add in the chilli, tomatoes, garlic and coriander leaves.
  9. Add a little lemon juice to it and whiz until the paste is smooth.
  10. Add to the serving dish.
  11. Now cook the tortillas into microwave for just 45 seconds.
  12. Add the chilli sauce into the cheese. 
  13. Combine all the ingredients of salsa together into a bowl.
  14. Display everything together nicely in a large serving plate and serve immediately.

Tip: If you can find ready to eat Falafel at your nearest supermarket or delicatessen, then get tortilla wraps to fix yourself a quick lunch. Serve it with some tzatziki or mint raita for that extra touch of yumminess.
