Mango, Carrot and Coriander Salad Recipe

In lieu of summer, we're sharing with you today a refreshingly new recipe that's going to make the season brighter than it already is. This "Mango, Carrot and Coriander Salad" recipe makes for a delicious breakfast or lunch, and probably dinner, too. It's a healthy mix of your favorite fruits and vegetables, plus a little bit of chili sauce to keep things interesting. Colorful, bold and healthy, this dish is the epitome of summer. See ingredients and method below:

Prep Time: 20 minutes

Cooking Time: 10 minutes

Yields: Makes 2 Servings


For the sweet chili sauce:

  • 1/4 tsp garlic, chopped 
  • 50 ml brown rice syrup 
  • 1/4 tsp lemongrass, chopped 
  • 1 tsp fresh chilies, chopped 
  • 1/2 tsp coriander, chopped 
  • 1/4 tsp fresh ginger, grated 
  • 1 tbsp lime juice

For the salad:

  • 160 g mango, cut into thin slices 
  • 1/4 tsp black onion seeds 
  • 1 lime, grated and juiced 
  • ½ tsp sesame seeds 
  • 250 g carrots, grated 
  • 10 g coriander, chopped 


  1. To make the sauce, combine all the ingredients of the sauce into a bowl and stir well. Set aside for now.
  2. To make the salad, in a pan heat the black onion seeds and the sesame seeds. They would become golden when they are ready.
  3. In a large serving bowl, add the mango slices, lime zest, grated carrots, chopped coriander and toss well.
  4. Add in the toasted seeds and pour in the lime juice.
  5. Mix well and then drizzle the sweet chili sauce on top.
  6. Serve immediately.
